A Moroccan Feast with Friends

As I often cook on my own, I love cooking with friends. And any meal with a theme and a guide that evokes great memories is a lovely treat. Inspired by a recent trip to Morocco, which you can read about here, friends and I gathered to create a Moroccan Feast. The menu was created and guided by What’s Gaby Cooking, who laid out recipes and guidance via her marvelous site. The menu isn’t complicated but there are a few courses and lots of chopping — ideal for anyone who wants to pitch in. We had nice wine and Moroccan music to guide us in the background.

Tips for First Course:

We made and marinated the green olives in the morning, but I would make these a day ahead. Served the next day the flavor deepens into the olives.

The dip was made ahead as well. We used cherry tomatoes. This creates a lot of skins, so we blended the mixture to lessen the appearance and improve the consistency of the dip.


The Main Course

As most chefs and cooks say the key to the best meals is good fresh ingredients. In this case, the start of the show would be the purcase in a tagine. Invest in a good one with a cast iron bottom that work on a stovetop. The results speak for themselves.
